Creamy White Chicken Chili

I sprinkled in more cumin- ½ tsp or more. Probably could use less sour cream. 2nd time I made it, it was great without the sour cream and half and half. To make it quick, use canned chicken from Costco.

1 lb. boneless skinless chicken breast ( cut into 1/2 inch cubes)

* 1 med. onion
* 1/2 tsp garlic
* 1 TBSP extra virgin olive oil
* 2 cans ( 15-1/2 ounce each) great northern beans ( rinsed and drained)
* 1 can ( 14- 1/2 ounces) chicken broth
* 2 cans ( 4 ounces each) chopped green chilies
* 1 tsp. salt * 1 tsp. ground cumin
* 1 tsp. dried oregano
* 1/2 tsp black pepper
* 1/4 tsp. cayenne pepper
* 1 cup ( 8 ounces) sour cream
* 1/2 cup light whipping cream

In large saucepan, saute chicken, onion, and garlic powder in oil until chicken is no longer pink. Add beans, broth, chilies, and seasonings. Bring to a boil. Reduce heat; simmer, uncovered for 30 minutes. Remove from heat; stir in sour cream and whipping cream. yield 6 servings
