Oreo Coconut Ice Cream Dessert

Chocolate Sauce:
1 cup evaporated milk
6 oz. chocolate chips
10 oz. marshmallows

Chocolate Sauce: Melt at medium heat. Cool completely before putting on top of ice cream (1/2 to 1 hr. at least!)

½ cup butter
1 ½ cups Angel Flake coconut
1 large pkg. Oreo cookies (40 cookies)
½ gal. vanilla ice cream

Melt butter in frying pan. Add coconut. Stir and toast evenly. When it’s barely brown, remove from heat. It continues to cook and can burn easily.

Crush Oreo cookies in blender, 6 at a time. Add to coconut mixture and blend. Pat 2/3 of it into 9x13 pan. Using ½ gallon vanilla ice cream, cut into 1 inch slicies and cover with Oreos.

Pour Chocolate sauce over ice cream and top with remaining Oreo-coconut mixtures. Chill overnight for best results!

Italian Crock Pot Chicken

4 to 6 boneless skinless chicken breasts
1 (10 ¾ oz.) can cream of chicken soup

1 (8oz.) pkg. cream cheese

1 packet Good Seasons Italian dressing mix

Combine soup, cream cheese, and dressing mix. Pour over chicken in crock pot. ( I dump it all in as is and half way through day stir it). Cook all day on low – heat. Serve over noodles or rice. ( I prefer rice because it is kind of a rich dish and the bland rice is a good complement).

Chicken Tortilla Soup

3-4 chicken breasts (I usually just put them in the crock pot frozen)
2 cans black beans
1 can of corn
1 can chicken broth (water and chicken boullion cubes also works)
1 packet taco seasoning mix
1 cup salsa (any kind, sometimes I'll just add the whole jar)

Top with grated cheese, sour cream, and chips before eating.

You can throw it in the crock pot in the morning, cook it on low, and it's perfect by dinner time. The chicken usually shreds on it's own, but you may want to shred it yourself before serving it.

Yummy Breadsticks

3 c. warm water

1 TBS. yeast (fast acting)

2 TBS. sugar

1 TBS. salt

3 TBS. olive oil

7 ½ c. flour

1 c. butter

½ tsp. fresh garlic

1 c. ground parmesan cheese (Kraft)

Salad Supreme

Add Yeast, water, sugar in mixing bowl and wait 2 min. Pour in salt, oil, flour and knead 5-10 minutes in mixer/Bosch. Then knead dough with 1 Tbs. olive oil in a large bowl and cover with plastic wrap and let rise 1 hour.

Then divide into 2 balls. (1 ball for each cookie sheet). Roll out like a pizza dough on a jelly roll pan and pour ½ c. melted butter and ¼ tsp. garlic. Then flip like pizza dough on other side and sprinkle with parmesan and Salad Supreme. Repeat process with 2nd jelly roll pan.

Then cut with pizza cutter into long strips vertically and 1 horizontal cut in middle to make for good eating size. Cover with kitchen towel and raise 1 – ½ hrs.

Bake at 350 for 20 minutes. Then when right out of oven, pour ¼ cup melted butter on top and serve.
